Acai photoI LOVE smoothies more than anything and this breakfast is like a smoothie but with toppings that make it out of this world delicious. It’s main ingredient, Acai berry (ah-Sah-ee), is packed with nutrients and has plenty of nutritional benefits- none of which I’m super concerned about. Fact is, it tastes really delicious and can be purchased at most grocery stores now in cute little frozen packs (I got mine at whole foods). Yum!

Ingredients:
1 pack frozen Acai
1 Banana (1/2 for topping)
1 cup strawberries (1/2 for topping)
1/4 cup frozen mango
1/4 cup frozen pineapple (Whole Foods has a tropical mix in the frozen section with strawberries, pineapple, and mango. So much easier)
1/4 cup frozen blueberries
1/4 cup plain, non-fat greek yogurt
1/4 cup water

Toppings:
Strawberries
Blueberries
Banana
Unsweetened shredded coconut
Honey
Granola

Blend all smoothie ingredients together. Should feel a little thicker than a regular smoothie. If you need to add a little more water to blend, do so, but only add a little at a time. You want the base to be thick.

Add any fruit toppings you want. Some granola. Get creative!! The shredded coconut and honey drizzle are a must. Enjoy and Acai you soon. 😉
