Okay you guys… so summer has officially kicked into full gear, and if you’re anything like me, salads have become your new best friend. Not only do they help keep that bikini body in tip-top shape, but they are so refreshing on a hot summer afternoon. My current obsession was inspired by one of my all time favorites- the True Foods’ kale salad. This recipe is super easy and will stay fresh for at least a few days. All you need are a few simple ingredients and literally 10 minutes out of your day, and you’ll have the perfect summer salad. Here’s what you’ll need:
– olive oil
– balsamic vinaigrette
– salt & pepper
– 1 clove of fresh garlic
– 1 lemon
– shaved parmasan cheese
– croutons
– 1 head of organic kale, or pre-chopped
First, we’ll start with the homemade dressing. Fill a salad dressing bottle with 3/4 olive and 1/4 balsamic. I make a whole bottle because, well, itβs delicious and then I only have to make once. Then, add a whole clove of freshly minced garlic (i’m a huge garlic fanatic, but if a whole clove is too much for you, feel free to adjust!). Next, add a pinch of salt and pepper. Finally, squeeze in the juice from 1/2 lemon and shake thoroughly. As simple as that.
Once the dressing has been made, the rest is a piece of cake. Take the head of kale and, using kitchen scissors, cut the kale into tiny pieces. Add about a cup of shaved Parmesan (more or less), a cup of crumbled up croutons, top it off with the salad dressing, and there you have it! For those of you who like to add a little protein to your salads, this recipe would definitely not disagree with some grilled chicken or shrimp.
The great thing about kale is you can put the dressing on and the salad will still be good for a few days- you don’t have to worry about the leaves getting soggy (it actually tastes better when the leaves soften up a bit). This simple recipe is full of nutrients and natural ingredients and could not be any more tasty! Happy eating and happy bikini body.
That is a very good point about kale leaves getting softer with dressing on them. I had not thought of that! Also, I love the style and color scheme in your blog. Very beautiful! I am working on changing the colors on my site since I am not loving the new look. It is hard–so many beautiful combinations out there!

I don’t known if I’m late in the “game” but I’ve been following “ben and lauren happily ever After” a huge fan and I love you lauren you’re an amazing and mature person and your blog is an inspiration you’ve found yourself a gem of a fiance he’s also smart and practical Im a lot older than you and I want you to be happy cause I see he’s special just please take one step at a time if marrying him is what you want then just focus on the wedding you don’t want to wear him out with the other stuff you’re already in a beautiful home with him don’t demand more think about how lucky you are to have him in your like and give the reat time to fall into places so I hope “life with ben ” can continue to be blissful if you follow my advice best of luck!
